I don't normally blog about diets but in the spirit of keeping posh & little myself, I've being low-carbing it for the last few months. In addition to a losing weight, I've discovered some really yummy recipes and tricks along the way that are keepers even off Atkins. My son especially loves this one, my low carb tortilla that I use for tacos a or tortilla chip alternative. He calls them cheese chips.

My top five favs this time around (I've done Atkins after each pregnancy and before my wedding) are pancakes, buffalo chicken dip, meatloaf, low carb mashed potatoes and crunchy tacos.

Taco night is probably our family's favorite meal and I used to be left out until a recent discovery I had while making low-carb croutons. I do this by dropping a handful of grated parmesan on a cookie sheet, baking it until crispy, then breaking it up in little pieces after it's cooled. I love this on salad even off Atkins. The crisped parmesan makes a very fancy & low-carb crouton alternative. Anyway, recently when I did it with cheddar cheese (since I was out of parm), I didn't bake it enough and it folded in half just like a taco shell. It was a wonderful boo boo that I saved for that evening since we were planning tacos. They were amazing. I would say almost better than the real thing.

Low Carb Tortilla:

  • handful of cheddar cheese (1/2-1 cup grated depending on what size tortilla)

Drop a handful of grated cheese (any cheese would probably do) on a cookie sheet and spread it out to make the size tortilla you want. I usually use enough cheese to make a small tortilla. Keep in mind it will spread a little when baking. bake for 6-8 mins @ 350°. 

The ends should be browned but you don't want it browned all the way to the middle or it will just crack and not bend. If this happens and you over bake it, don't panic and bag it for a salad topping or tortilla chips. Then try again! The picture above was 6 minutes. The very top picture was 8. It takes a little practice.

Remove from the oven and let it sit on the cookie sheet for a few minutes. After it's cooled enough to remove w/out splitting apart, transfer it to a paper towel to absorb some of the grease. Then fill with your low carb taco fillings.

Low Carb Doritos/Tortilla Chip:

Using the same approach as above but break or cut your tortilla into wedges. Sprinkle with chili powder for a little spice. You can also just cut your cheese into squares if you don't feel like grating it.
